Over the past few years, with kids, my need for a quick pizza dough became apparent and I think we finally have our favorite dough with a mixture of whole wheat, AP, and corn meal. With only a 30 minute rise time, pizza can be thought of in the late afternoon and made for a early dinner.
608's Go To Pizza Dough:
10 oz. Water
4.5 tsp yeast (2 packages)
5 oz honey
1.25 oz Olive Oil (2-3TBL)
12.5 oz AP Flour
4 oz Whole Wheat Flour
2.5 oz Corn Meal
2 tsp Salt
Dissolve honey in hot water (not boiling, but not just warm water) add yearst then olive oil. Add flours and salt, mix by hand or in a stand mixer. If in stand mixer let mix for 10 minutes, otherwise knead it for that long. Coat with olive oil and place in a warm place to rise for 30 minutes until almost doubled. If you have the time or you forget, it is fine to let it rise longer.
The key to the quick rise is the hot water and the amount of yeast. If you don't use hot water it will take longer, but you need to make sure not to use too hot water, or the yeast can be killed. Works great rolled out thin and on a stone, or thick in a cast iron pan slathered with olive oil. Cook as high as your oven can go, at least 450.
