Preserving the Harvest :: Sweet Corn



Go to the market, buy some super sweet, cut it off the cob, bag it, freeze, enjoy all winter.  Sweet corn is one of the easiest things to freeze, if you get it directly from a farmer soon after harves, the sugars don't have time to convert into starch, blanching is not required and the summer sweetness adds a lot to winter soups and burritos!
